The Best Cheese

Can anyone guess what I made tonight? I think that some of you may have an advantage over others. Namely the Earnhardt clan.
We started with a recipe of a master at making this (Mom Mom)

We encountered a few problems along the way. That grater sure does like to bite our fingers. I do wonder how my Grandmother could make the quantities of this that she did and not have her hands covered in band aids. I guess it was because she was a pro.
Mmmmm. The finished product tasted a lot like Grandma's but the texture was a little off. Last time I made it it was too chunky, This time maybe a little too creamy.
I may not have perfected the art of making this yet, but one taste and I am thrown back in time. Sitting at a big beautiful table in our farmhouse. Surrounded by my family and enveloped in the love that comes along with them. It is funny how tasting something so familiar can bring these wonderful feelings back.

I do admit that I have been quite the sorry blogger lately. No updates. No pictures from the recent holiday or mini family reunions . I do promise those are on the way. I just have not really had time to do much with the pictures. We are all doing fine, it has just been a hectic few weeks. The last week in March we were treated to another mini Johnson Family reunion. We had wonderful Aunt Linda and Uncle Don from Ohio come to visit. It was such a treat to get to see them. We also got to see our great cousins Susan, Jodi, and Fred. We love getting to see them and they were so thoughtful to include us in their Easter egg hunt. I promise all the pictures will follow sometime soon. Other than that Emily has just started her fourth and final quarter of second grade,the baby tried to cut his toe off on the base of the ironing board, and Andrew has been MISERABLE from all the elevated pollen counts this year- they say the pollen count in NC is between 4 and 9 times the avg - Lovely. We are still trying to get the house ready to sell( might happen quicker if we were actually here sometime), We have the flooring ripped out of three rooms at Mom and Dad's house , and Billy and his cousin are building a deck at his house. So as you can see things have been a little crazy. I Promise I will post some pics soon. Hope everyone is having a wonderful and sneeze free Spring! Love to All.
